Peaches and Cream Dessert (215 calories)

Good Morning!  Boy do I have a dessert for you!  I really like to center my recipes around texture and color.  I am a person who loves diversity.  

I am also a person who requires dessert after EVERY meal.  Breakfast included.

So here is a dessert that works well with any meal, breakfast included.  We are adults.  We can have dessert FOR breakfast, if we want!  Here's how it goes:

First, cut two pieces of Phyllo dough, cut them in half, and stack them, spraying no-calorie butter in between each layer.  Then, I gently crumbled up some foil and draped the Phyllo dough over this and cooked it for about 5 minutes, until it looked golden.

Then, while the dough was cooking, I cut up a peach, mixed it with Splenda, and a dash of cinnamon, and I sauteed it.  I added water until it bubbled and whispered sweet nothings to me.

Once the dough was done cooking, I flipped it over and removed the foil by gently crumbling it up some more.  This is why it was so important that you didn't squish it all the way before you draped.  Put the Phyllo dough in a bowl.


Spoon about 1/3 of a cup of fat free yogurt into the bowl....


Put your peaches in next...


Spoon another dollop of yogurt on top, and finish with a sprig of mint.


Enjoy the conflicting texture of the crunchy Phyllo dough, and the creamy yogurt and peaches!  

Go ahead.  Eat the mint.  You know you want to....



Peaches and Cream in a Bowl (215 calories)

Two pieces of Phyllo dough (64 calories)
One peach, roughly chopped (64 calories)
2 T Splenda 
Dash cinnamon
2/3 cup yogurt (87 calories)


1.  Cut two pieces of Phyllo dough, cut them in half, and stack them, spraying no-calorie butter in between each layer.
  
2.  Drape the Phyllo dough over crumbled foil and cook ~5 minutes, till golden  


3.  Meanwhile, in a saucepan, mix peach, Splenda and cinnamon.  Cook until bubbly.

4. Remove Phyllo dough from foil ball; put the Phyllo dough in a bowl.

5.  Spoon about 1/3 of a cup yogurt into Phyllo dough.  Place peaches on top.  Finish with yogurt and a sprig of mint.
